Power Systems vs. Power Electronics/Embedded Systems

Which field will most likely have more career stability in the coming decades? In my state, most jobs are in utilities for power systems and then there are the aerospace/defense companies who want people with a mixed background in power electronics and embedded systems.

Which of these fields is most immune to AI and offshoring? I hear with power systems, you can literally find a job in even the most rural parts of the country.
