Published adventures for 1-2 PCs?

So I haven't GMed anything in many a year and I'd love to give it a try with PF2e, but I'm shy about it so what I'm thinking is I'd really like to run a few sessions one-on-one with just my spouse before attempting to gather a larger group. I've googled around a bit for general advice, watched the Matt Colville video etc, but I'm wondering if anyone has thoughts on specific premade adventures that might work well for this? I know PF2e is a team game and all, and I'm probably going to throw in a helper NPC (likely a healer), but I'm prepared for some wonkiness from the low player count since it's mostly a trial run. Starting at level 1 would be preferred but not essential. Thanks!
