It's a poor craftsman that blames his tools. But I feel like I'm doing everything right, and my pan isn't cooperating Humble me, please.

I have a Smith Clark Ironworks square pan.

Frustrated with the pan, I started over. Sanded the old coat off to silver (some pock marks still, not super smooth) at 80 grit, and reseasoned. The process I used:

Lightly heat the pan to spread Crisco.

Wipe it all off as best I could.

Put it into a preheated (475f) oven for 1 hour.

Turn the oven off, and let it cool.

I repeated that 4 more times.

If/when I wash it and not just wipe it, I use a light amount of Dawn, rinse, and then I put it right back on the stove to dry it. I wipe a very thin layer of Crisco, as though I'd be seasoning it.

But after just a couple weeks, my seasoning already looks like this, and paper towels come off brown even after a soap wash. Fortunetely, the nonstick action seems to be fine for now.

Can anyone tell me what I'm doing wrong? Or do I just actually have a shitty pan?
