Looking for alternatives to the Montage M ESP & workflow suggestions

Bear with me, I'm new at all things synthesizers (hardware and software alike).

I currently own the MODX 8 and Logic Pro. When I initially discovered MODX Connect, I was thrilled because I (incorrectly) thought the hardware instrument sounds were imported into Logic with the MIDI data, etc, which would allow me to continue working on projects without the MODX attached.

Obviously I was wrong. I see the Montage M ESP was released, which does exactly what I want. I want to be able to seamlessly work on projects whether the physical piano is attached or not.

I also want to be able to start projects on just the MODX without the Mac attached to hash out simple musical ideas until they become DAW worthy.

Are there other manufacturers such as Roland or Korg that have pianos + software plugins that can accomplish this? I've done some research but haven't come up with anything conclusive.

And what is your workflow like? Do you have the same problem, and if so, how have you overcome it or been able to effectively work around it?
