Brix Testing Sungold Tomatoes at Harvested at Different Stages

I know there's taste differences when tomatoes are harvested at different stages, but how big of a difference I was not aware of. I purchased a portable Refractometer (Brix Meter) to test my kiwi last year and decided to test my tomatoes also. I harvested 3 tomatoes from the same cluster at different stages (top left). Top right is when the tasting beings over the course of 5 days as they all ripen differently. The 3rd tomato top right pic is ready for testing and as you can see, it's more orange vs golden.

I always harvest my Sungold at full blush (3rd tom on right) without any green and the brix shows how much higher it compares to the other two for fresh eating and prefers when the brix is between 8.5-9 as the past 9 it's like eating candy (too sweet for dishes but good for popping in your mouth).

Thought you might be interested. Happy growing!
