Okay, this might seem like a stupid question, but...

I cooked some green lentils last week and put them in my fridge without a lid and last night I discovered that they were sprouting!

My question is, are they still safe to eat?

Also, how the heck did they sprout? I was certain that there were...certain environmental and humidity factors that you had to get right in order to start sprouting.

So, I think the answer to my first question is a resounding "duh", but I'm really unsure about this. I mean, I had already cooked them! Wouldn't that kill off anything that would enable the bean to still grow?
