Is it safe to store dehydrated tofu over longer periods?

Hello!

I recently followed the linked recipe, in which he coats crumbled tofu in a marinade, bakes it until it gets quite dehydrated and chewy, then finally rehydrates it at the end.

I was wondering, would it be possible to store it for a longer period in that dehydrated state, and then rehydrate when necessary? It just seems like such a convenient thing to bring along for a trip, quick and easy deliciously marinated tofu that just needs water and a pan to be ready.

But I don't really know how safe that would be, as I'm very new to using tofu. It's opened tofu that's been heated, and I don't know how quickly that would spoil in room temperature or a fridge. It's probably not **completely** devoid of water, and I assume some of the fats and things from the marinade might affect its shelf life. I assume it'd keep for a long time in the freezer, but I'm wondering how long it would keep in room temperature. Hours? Days? Anyone have an idea what to expect?
