Non-Vegan looking for a parmesan substitute

Hey there!

So I am cooking for two of my best friends who are also a couple. One is vegan and the other just eats mostly vegan food but will eat anything.

So I’m making one of my favourite foods since childhood, polenta. I’m going to top it with roasted vegetables and a red wine vegan gravy.

I can substitute the butter in the polenta for a vegan margarine, but I’m struggling with a Parmesan substitute since I love the range of flavour it brings in the dish. Anyone have suggestions on what would be a good replacement for it in polenta?
