Looking for vegetarian "bacon" recipes

It is finally warming up enough for me to want sandwiches and I am looking for spice them up. I have neen looking at various "bacon" recipes and am having trouble deciding which way I want to go. I have the makings for seitan, but also have seen recipes that use eggplant as the base. My biggest issue with the seitan is that we do not have a lot of counter space, so I cannot try to make several recipes.

Does anyone have any recommendations? I more want the flavor, rather then the texture. If it will freeze that is even better.
