Horizon View 5.3 persistent disk backup strategy?

Hey folks. Sorry if this is a stupid/inexperienced question, I'm sort of new at the implementation and design thing. I'm in charge of a small (~120 user) Horizon View 5.3 VDI rollout, and I'm working on the backup strategies. We're going with Veeam for the heavy lifting, but also have access to Commvault 10. Additionally, as I found View Persona Management to be rather buggy in 5.3, we're going with persistent disks for the user profile redirection. I've found them to work much more reliably, but......

I'm curious what the best way to backup the independent user profile disks would be? I see the individual .vmdks on the datastores, can Veeam nab that? Or Commvault? I'm currently backing up the PD datastore using snapshots on the SAN, but that's not a great solution imo. Mostly because if the entire SAN goes, the snapshots go with it.

Ugh. Sorry again, like I said I'm sort of new to this and somewhat overwhelmed. I appreciate any insight, or even links/nudges in the right direction anybody smarter than I could provide. I've found some conflicting info on the subject, and I'm just learning Veeam (quickly), but I'd love to know how others have formulated a View persistent disk backup strategy. Thanks all!
