Bakery Backroom Layout?

Is anybody aware of where you would look to find the intended layout of a backroom area? Specifically in my case I’m looking for the intended layout for my production area (where tables are supposed to go, where the lines are drawn between deli/bakery, where the supply mods are supposed to go) as where doing a big cleaning and reset project in our store. I can only find sales floor layout through SET but I can’t find anything for the backroom layout.
