Question about Delos (Minor Spoilers)

So we find out in the latest episode that the board is trying to copy the data the Ford can apparently wipe out with the snap of his fingers. At first, I thought this was a major plot hole: Every single software company today copiously backs up their data, and if Delos stepped in and bought Westworld, you'd think they'd have assurances that data would be backed up offsite. But maybe this is part of the large Westworld mystery, that Ford somehow still has power over this board. Can anybody explain why this would be?
