book about Alien invasion, probably over pancakes.

I apologize the details I have on this book are fuzzy because I was so young, it was a chapter book about aliens invading a town over a breakfast food. I want to say it was pancakes. The cover had a close up of one of the aliens who really just looked like a fat man with green possibly swirly glasses, looking directly at the viewer, while a ship hovered over a building in the background that may have been made of the breakfast food of subject. It was the early 2000s when my mom tried to read this book to me but it’s possible it was from the late 90s as well given I didn’t get the book new. I remember it absolutely terrifying me and I’m curious if I was being dramatic or was given a book way too old for me.
