Beginner kayak safety question

My buddies and I all have rowing experience in rafts and drift boats and are comfortable in class iv water in those. We are all planning on taking some pool courses to get our roll and re entry skill dialed in. I don’t plan on soloing but what class water would it be safe to start on? We have access to pretty much every size river and creek with class I-V water.
