Question regarding levelling

Hi, I used to play WoW way back in the day (Wrath was my last expansion), then around 2014 I played a little bit but real life happend and I couldn't play anymore.

Now I have some spare time and I wanna play through the zones and catch up with the lore. But I've read that new characters start in Dragonflight already and eventually you need to talk to someone to acess the old content.

My question is: Is there a way I can just start my levelling experience in idk, Shadowglen, see the changes in the old zones with Cataclysm, then eventually move on to MoP content and so on? I do plan on eventually playing the current content 'cause it sounds fun but I don't have time to play on both classic and modern.

I hope my question isn't too confusing and my english isn't too broken.
